Summertime
Chicken Salad
3 ½ Tbsp. Mayonnaise,
lite 4 oz. can Mandarin
Oranges 3 ½ Tbsp. Yogurt, Plain low
fat 2 ½ Tbsp. Raisins,
seedless ½ cup Celery, diced
small 12 oz. Cooked Chicken,
cubed 1 Tbsp. Scallions, fresh,
sliced thin 1 Tbsp. Dried
Cranberries 2 Tbsp. Almonds,
sliced Dash (to taste)
Tarragon Leaf Dash (to taste) Basil Leaves Dash
(to taste) Garlic, granulated Dash (to taste)
Salt Dash (to taste) Black Pepper
Drain orange segments
and set aside. Chop or dice cooked chicken into
bite sized pieces – set aside. In a bowl, combine
lite mayonnaise, low fat yogurt, salt, pepper, garlic,
tarragon leaves, scallions and celery. Add
chicken, almonds, cranberries, raisins and continue to
mix. Add mandarin oranges and carefully mix.
Chill and serve. (Makes 4 servings)
