Blueberry
Bran Muffins

1 ½ cups All-Bran Bran Buds cereal

1 cup and 2 Tbsp all-purpose flour

¼ cup sugar

2 Tbsp soy flour

1 tablespoon baking powder

¼ teaspoon salt (optional)

1 ¼ cups soymilk
-
2 egg whites
-
2 Tbsp. oil
-
2 Tbsp. fat free vanilla yogurt

1 cup fresh blueberries
In electric blender or food processor, crush All-Bran
Bran Buds cereal to fine crumbs. Stir together crushed
All-Bran Buds cereal, flour, sugar, baking powder, and
salt. Set aside.
In large mixing bowl, combine milk, egg whites, yogurt,
and oil. Mix well. Add flour mixture and fruit, stirring
only until combined. Portion batter evenly into twelve
2 ½ inch muffin-pan cups coated with cooking
spray.
Bake at 400 degrees F about 25 minutes or until golden
brown. Serve warm. Yield 12 muffins.
