and Spicy Tofu Stir Fry

1 Tbsp + 2 ½ tsp.extra virgin olive
oil

20 Oz. fresh mushrooms, sliced

1 lb. firm lite tofu, chilled and
cut in cubes

3 tbsp. lite soy sauce
-
¼ tsp. cayenne pepper
-
¼ tsp. ground ginger
-
2 cloves fresh garlic, chopped
-
2 tsp. corn starch
-
1 ½ tbsp sherry (wine)

1 tbsp. fresh lemon juice
Sauté mushrooms in oil. Add tofu cubes.
Mix soy sauce, spices, garlic, corn starch, sherry,
and lemon juice together and add to mushroom and tofu
mixture. Toss all together and heat through. Makes four
6 oz. servings.
