1 tablespoon minced shallots

finely grated zest of 1 lime

3 tablespoons snipped fresh chives
1. Whisk together the lime juice, mustard, salt, and
pepper.
2. Slowly drizzle in the oil and water, whisking constantly
until thickened.
3. Stir in shallots and lime zest.
4. Add chives 15 minutes before serving.
