Roasted Maine Potatoes
16 oz red potatoes, quartered
1 tbsp extra virgin olive oil
salt and pepper to taste
1 1/2 tbsp fresh chopped rosemary
Cut potatoes in quarters. (smaller if potatoes
are large) Brush well with olive oil, sprinkle with
salt, pepper and fresh rosemary. Toss evenly to coat.
Spread potatoes evenly on sheet pan. Bake at 350 degree
oven until tender.
