Pasta
with Plum Tomatoes and Pesto

6 oz. prepared pesto (homemade or
commercial)

¼ cup hot water

1 lb. linguini

3 cups fresh plum tomatoes (sliced)

1 Tbsp. fresh basil, chopped (or to
taste)

1 ½ oz. feta cheese, crumbled
-
2 - 3 cups Harvest Burger crumbles
for recipes
Cook pasta according to directions on package.
Thin pesto with hot water. Combine pesto with Harvest
Burger crumbles. Heat gently. Combine pasta, pesto,
and Harvest Burger crumbles in a large bowl. Toss well.
Add tomatoes, basil and cheese, tossing gently to coat.
Makes six 1 ½ to 2 cup servings.
