Spicy
Carribean Rice

1 1/4 cup cooked rice

2 teaspoons extra virgin olive oil

1 teaspoon garlic, minced

1 cup onion, coarsely chopped

5 oz. red bell pepper, seeded and
diced
-
1 small jalapeno pepper, seeded and
dried
-
5 oz. Granny Smith or Golden Delicious
apples, cored and chopped

Salt to taste

1/8 teaspoon ground red pepper, if
desired

1/4 teaspoon dried thyme leaves
1. Keep rice warm.
2. In large stockpot or steamjacketed kettle, heat
garlic in olive oil over medium heat for 1-2 minutes.
3. Stir in onion, bell pepper, jalapeno, and apples.
Continue cooking, stirring frequently for five minutes
or until onions are translucent, adding water if needed
to prevent sticking.
4. Stir in salt, red pepper, and thyme.
5. Transfer and stir apple mixture into warm cooked
rice and serve.
Yield: 5-1/2 cup servings
