Maine Medical Center - West Indian Peanut-Rice Salad

West Indian Peanut-Rice Salad

  • 3 cups cooked long-grain white rice, at room temperature
  • ¼ cup minced red bell pepper
  • ¼ cup minced green bell pepper
  • ¼ cup chopped green onions
  • 2 tbsp minced fresh coriander
  • 1 tbsp peanut oil
  • 4 tbsp fresh lemon juice
  • 1 tsp sugar
  • ¼ tsp salt
  • lettuce
  • about 16 fresh orange sections (approx. 1 ½ oranges)
  • 1 cup pineapple chunks(juice packed)
  • ¼ cup chopped dry roasted peanuts

Combine rice, peppers, onion, and coriander. Toss in mixture of oil, fresh lemon juice, sugar and salt. Mound on dark green leafy lettuce and surround with orange sections and pineapple slices. Sprinkle with peanuts. Serves six.
